This is a batch premix that is loaded with the tastes associated with festive period, making it ideal for a festive gathering. Save the extra cordial you can use for breakfast cocktails, sweets, or to mix additional servings of the drink.
The Bikini Cocktail
Makes enough for 10 guests
To make the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Premix (makes 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Directions
To prepare the Cordial: Place the listed components into a pot, heat until it reaches a simmer, stirring to dissolve. After that, remove from the heat and leave to cool completely. Transfer into a sterilised bottle, cap it and refrigerate it in the fridge, where it will keep for around one month.
To make Premix: Mix all the spirits and syrup into one large bottle, let it rest for one hour, then pass it through , ideally through cheesecloth, to ensure it's perfectly clear.
For serving: Add 85ml of your cocktail base to a stirring glass packed with ice, and stir gently for one minute until cold. Strain into a frosted cocktail glass or similar, top with a few cranberries and complete it by giving it a light spray of mandarin oil over the drink.
